Make the Syrup: Strain the ginger water into a large bowl, discarding the ginger pieces. While the water is still hot, dissolve the sugar into it, adjusting the amount based on your preferred sweetness level.

Activate the Yeast: In a small bowl, dissolve the yeast in a little warm water. Let it sit for 5-10 minutes until frothy. This step is crucial for fermentation.

Combine Ingredients: Add the lemon juice to the ginger syrup. Then, stir in the activated yeast mixture. Add the remaining 4 cups of cold water and mix well.

Bottle: Pour the mixture into clean, airtight bottles, leaving some space at the top. Seal the bottles tightly.

Ferment: Allow the bottles to ferment at room temperature for 24-48 hours. Check the pressure occasionally to prevent the bottles from bursting.

Refrigerate: Once the ginger beer has carbonated to your liking, refrigerate to stop the fermentation process. Serve chilled.
