Hands down, this is the best meatloaf recipe we’ve ever had in our house

Discover the timeless taste of Slow Cooker Meatloaf, a heartwarming dish cherished by countless families across eras. Renowned as an American favorite, this dish fuses ground meat with breadcrumbs and aromatic spices, producing a loaf bursting with moist and robust flavors. While its roots remain debatable, meatloaf renditions have been traced back to ancient civilizations where leftover meat was ingeniously combined to craft a wholesome meal. Presently, the slow cooker variant stands out as a go-to for many due to its convenience and unparalleled taste.

Consider these delightful pairings for your meatloaf:

Mashed Potatoes: A timeless pairing, the silky texture and buttery taste of mashed potatoes perfectly offset the richness of the meatloaf, making every mouthful heavenly.

Roasted Vegetables: Elevate your meal with caramelized veggies like carrots, Brussels sprouts, or green beans. Their crunch and flavorsome juices enhance the meatloaf’s succulence.

Steamed Broccoli: For a lighter side, opt for vivid steamed broccoli. Accentuate with lemon zest or Parmesan shavings to intensify the palate experience.

SLOW COOKER MEATLOAF

Ingredients:

2 lbs ground beef

1 finely chopped yellow onion (reserve some for glaze)

12 oz dried stuffing mix

1.5 cups milk

2 eggs

Season with salt & pepper

Glaze Ingredients:

1.5 cups ketchup

1/4 cup packed light brown sugar

2 tablespoons reserved minced onion

2 teaspoons white vinegar

1 tablespoon classic yellow mustard

1/2 teaspoon pepper

Directions:

Prep your slow cooker by lining with aluminum foil, leaving enough to aid in removing the meatloaf later.

Stir glaze components in a bowl and set aside.

In a separate large bowl, amalgamate ground beef, remaining onion, stuffing mix, milk, eggs, and seasoning. Mold into a loaf and position in the slow cooker. Drizzle with half a cup of the crafted glaze.

Seal the slow cooker and simmer on low for 6-8 hours or high for 3-4 hours, ensuring the meatloaf’s core reaches 160°F (71°C).

Post-cooking, use the foil to gently extract the meatloaf. Garnish with another 2/3 cup of glaze and broil till it turns tacky.

Plate with preferred accompaniments and serve with residual glaze.

Embrace the beauty of effortless cooking with this Slow Cooker Meatloaf recipe. As the delightful scent wafts through your home, prepare for a feast that comforts the soul and revives cherished memories with each delectable bite.
