It’s like catching a ride on a nostalgia train, with stops at fun-filled days and yummy childhood snacks. So, let me tell you about a recipe that does just that for me: Caramel Crispix. Trust me on this, it’s a game-changer. It’s got this killer combo of sweet and salty that’s just… well, addictive.

I remember one bright summer day at my grandparents’ place. The house was wafting with that irresistible smell of something baking. Curiosity piqued, I wandered into the kitchen and there was my grandma, mid-way through crafting her famous Caramel Crispix. Just watching her had my tastebuds doing a happy dance. I jumped in, helping her drizzle the caramel over the Crispix, making sure each piece was smothered in caramel goodness.

And oh boy, when that tray came out of the oven? Pure bliss. Those once plain cereals were now a golden caramel treasure trove. We couldn’t help ourselves, diving in while they were still warm. Ingredients:

13 cups Crispix cereal

1 cup butter

2 cups brown sugar

1/4 cup light corn syrup

1/2 teaspoon vanilla extract

1/2 teaspoon baking soda

Optional: 1 cup chopped nuts or pretzel sticks for some crunch

Instructions:

Prepare a large baking sheet, either by greasing it or using parchment paper.

Using a tall saucepan, melt the butter. Once melted, stir in brown sugar and keep stirring as it comes to a boil.

Mix in the vanilla extract and corn syrup, then bring it back to a boil, ensuring you stir all the while.

Stir in the baking soda next. Be cautious as this will make the mixture foam up.

Now’s the fun part – toss in the Crispix cereal (and optional nuts or pretzels, if you’re using them) into this gooey caramel mix. Gently ensure every piece gets its share of the caramel goodness.

Empty out the caramel-clad cereal onto your prepped baking sheet. Spread it uniformly and then allow it to cool down. Once cooled, you can store them in an airtight container.

Don’t just keep this treat to yourself. Call over some pals or family and bask in the joy that this Caramel Crispix brings. Trust me, not only will it be a treat for your taste buds, but also a beautiful moment to add to your bank of memories. Enjoy!
